Use up that leftover easter ham for savory waffles

For many, a ham is their Easter dinner centerpiece, which often leads to leftovers that are even more exciting than the dinner itself, like soups, frittatas, and panini sandwiches. Sometimes the anticipation of leftovers is part of the allure of making the dish in the first place.

This year, you will have something extra special to look forward to: Ham and Cheese Waffles. Savory waffles have been gaining popularity and these waffles do not disappoint! They resemble a Monte Cristo, but with the buttermilk waffle spin pair beautifully with maple syrup or jam (fig or berry are my faves).

My family was blown away by this breakfast. You may just find yourself heading to the store for more ham, so you can whip these up again and again!

Savory Ham and Cheese Waffles

Makes: 2 Belgian or 6 regular-sized waffles (depending on your iron)

Ingredients:

1 cup flour
1 tablespoon sugar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
pinch of salt
1/3 stick butter, melted
1 cup buttermilk
2 egg whites, whipped
1/2 cup ham, diced
1/4 cup cheddar cheese, shredded

Directions:

In a bowl, combine flour, sugar, baking powder, baking soda, and salt. Whisk until combined. Set aside.
Whisk together melted butter and buttermilk, and add to the dry mixture. Mix slightly.
Whip your egg whites until stiff peaks begin to form. Fold into the waffle mixture along with the ham and cheese. Mix until just incorporated.
Cook on high setting in your greased, hot waffle iron for 5-8 minutes, or until waffles begin to brown and are crisped to your liking. (Cook time will vary based on type of waffle iron.)
Serve with maple syrup, jam, or powdered sugar and enjoy!

Tip: Once you remove the waffle, place it on a cooling rack for a couple of minutes so the steam doesn’t moisten the waffle. You can also place them directly onto your oven rack and into the oven at 200 F to ensure they’re crisp until serving.
