Before you go pull out a calculator to call our bluff, get your mind wrapped around this: we gathered seven of our favorite recipes, all centered around the same four ingredients, to take all of the planning out of your weekly menu.
Here’s what you mainly need:

Monday: Zucchini Quesadillas

Other Notable Ingredients: Tortillas and Cheddar Cheese

Quesadillas are great because they require minimal effort, but still pull together into a filling and yummy meal. Kids are especially big fans of these Mexican-inspired entrees, too, which as any parent with a picky eater will tell you, can be a miraculous feat. Swap out the traditional meat for a lighter julienned zucchini, and day 1 is … done!

Tuesday: Fresh Blueberry Chicken Salad with Almonds

Other Notable Ingredients: Red Onion, Parsley, Dried Cranberries, and Almonds

Pairing fruit with chicken salad has long been a trick of the trade, but blueberries are an inspired choice for their subtly sweet taste and small size (aka: no chopping roly-poly berries that just end up on the floor anyways!). Round out the salad with some onion, parsley, dried cranberries, and hearty almonds and you have not just a kid-friendly dinner, but great leftovers to send to school for lunchtime!

Wednesday: Autumn Pasta with Sweet Potatoes, Cranberries & Hazelnuts

After two nights of lighter meals, serve your family a nice, filling bowl of autumnal pasta. Devoid of the often overpowering tomato sauce, and supplemented with the sweetness of dried cranberries (which you’ll have left over from the night before) and the savory bites of hazelnut, this dish will leave your belly stuffed long before you tire of its flavors.

Thursday: Zucchini Lasagna

Other Notable Ingredients: Canned Diced Tomatoes and Ricotta

Break the zucchini back out again for a twist on an Italian classic. Tomatoes and ricotta pair excellently with zucchini lasagna noodles for a casserole that, for once, isn’t totally scary to kids. Most of the meals on this list are designed to lend themselves well to leftovers, but lasagna is notorious for being even more delicious the second day, so there will continue to be plenty of happy faces as long as this meal is around.

Friday: Sweet Potato and Black Bean Tacos

Here at Babble we have a motto: no week is complete without tacos. It’s been four days since grilling those tortillas into zucchini quesadillas, so layer uncooked ones now with warm sweet potatoes, black beans, zesty sauce, and some delicious toppings. This will be a great opportunity to use up any sweet potatoes that weren’t used in the pasta earlier in the week, and introduce new flavors into your family’s eating plan. Olé!
