It’s summer, which means strawberry season! We’ve been picking strawberries like mad lately, and to use them all up I’ve been making every strawberry-flavored thing under the sun. Recently my daughter requested strawberry pie, but I didn’t have enough berries to make a full-sized serving. I also didn’t have the time to make a crust! So, in the interest of ease and fun, I made these delicious Strawberry Mug Pies instead.
The recipe was so easy my daughter could help me execute it from start to finish. To make these little treats at home, first put the chopped strawberries in a bowl, add sugar for sweetness, flour to help bind the fruit, and zest for extra flavor.
Fill your mugs to the top with the berries. They will shrink while baking and the crust will dip in a little bit, which is completely normal.
Cut circles out of the puff pastry that will fit over the top of the mugs.
Make a few slits to give the fruit room to steam. Then place the puff pastry on top of the mugs, and brush with a beaten egg.
Bake the mugs on a cookie sheet for about 25 minutes. As they bake, the puff pastry will turn golden brown and the fruit will get warm and bubbly. It is the perfect way to make pie for family and friends, without the hassle of making a huge dessert from scratch!
Strawberry Mug Pies
Makes: 4Ingredients:
- 2 pounds fresh strawberries, rinsed, hulled, and quartered
- 1 tablespoon granulated sugar
- 1 tablespoon all-purpose flour
- 1 teaspoon grated orange zest
- 1/4 teaspoon kosher salt
- 1 sheet puff pastry, thawed
- 1 large egg
Directions:
1. Preheat oven to 400 F. Lightly oil the inside of 4 8-ounce oven-safe mugs or ramekins.2. Place the strawberries in a large bowl and sprinkle in the sugar, flour, orange zest, and salt. Stir everything together until the berries are evenly coated. Divide the strawberries evenly amongst the mugs or ramekins.
3. Place the puff pastry sheet on a well-floured surface and cut 4 circles out of it that are slightly larger than the top of the mug. Make a few decorative slits in the top of each one to allow steam to release in the oven. Place the pastry circles gently on top of the mugs so they rest on the rim.
4. Beat the egg with 1 teaspoon of water and brush the egg wash over each puff pastry cap.
5. Bake the pies for 25 to 30 minutes, or until the tops are golden brown and puffy. Remove from the oven and allow them to cool for about 5 minutes. Then grab a spoon and enjoy!
