I imagine the Seven Dwarfs ate much better with Snow White preparing their meals. As I thought about what she might prepare for their dinner, I thought of fish. Perhaps they might have caught a few fish from a nearby stream to fry up for their supper.
I also thought about mushrooms. These cremini mushrooms aren’t foraged from the forest, like some wild varieties. Certainly any mushrooms, foraged or not, would be delicious roasted alongside the fish. I love the depth of earthy flavor mushrooms have; roasting intensifies that. Green beans are also fantastic when roasted in a hot oven. Any green vegetable could be substituted.
There’s another boost of flavor from the thinly sliced lemons and shallots, as well as fresh thyme sprigs. It’s definitely a flavorful, easy dinner to put together. Brown rice is a great side dish.
Hidden Cottage Baked Salmon with Green Beans and Mushrooms
Roasting the vegetables and mushrooms alongside the salmon adds a lot of flavor and makes for an easy preparation and clean-up.Ingredients:
- 4 (4 ounce) salmon fillets
- 3 teaspoons extra virgin olive oil, divided
- 1 lemon, thinly sliced
- 1 lb. fresh or frozen green beans, ends trimmed
- 8 ounces cremini mushrooms
- 2 shallots, sliced into thin rings
- thyme sprigs
- sea salt and black pepper, for seasoning
- 2 cups hot, cooked brown rice, for serving
Instructions:
- Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.
- Rub 1 1/2 teaspoons of the olive oil over the salmon pieces. Place on the lined baking sheet. Season with a little sea salt and black pepper. Lay a few of the lemon slices over the salmon.
- Place the green beans and mushrooms in a large, wide bowl or shallow baking dish. Drizzle with the remaining oil and toss to coat. Arrange the asparagus and mushrooms around the salmon on the baking sheet. Season with a little sea salt and black pepper. Top the salmon, green beans, and mushrooms with the thyme sprigs and sliced shallots.
- Bake in the oven for about 20 minutes, or until the salmon is cooked through and flakes easily with a fork. Transfer to plates and serve with side of cooked brown rice.
Yields 4 servings.
