Funfetti rice krispie treats

Funfetti cake is a staple in most households, including mine. We’ve always enjoyed the classic cake version, but sometimes I use the box mix to enhance the flavor of other treats, like ice cream or rice krispie treats. The latter is a real favorite in my family, and make for a special treat in school lunches!

Making these is such a snap. You make rice krispie treats like you normally would, stir in the cake mix, and press them into a pan. I also add some sprinkles on top, per the request of my daughter. She LOVES the sprinkles, and I don’t mind letting her top them off for a pop of color. Once they are cooled, we always cut a square immediately to taste. They are chewy and crunchy, and feature a strong vanilla cake flavor. They’re reminiscent of a soft piece of freshly baked funfetti cake, still warm from the oven — a perfect sweet combination!

Funfetti Rice Krispie Treats

Makes: 20

Ingredients

  • 1 stick unsalted butter
  • 10 ounces marshmallows
  • 1 cup funfetti dry cake mix
  • 5 cups puffed rice cereal
  • Sprinkles, for garnish (optional)

Directions

1. Lightly grease the bottom and sides of a 9 x 13″ baking dish. Set aside.

2. In a large saucepan, melt the butter over medium heat, then stir in the marshmallows. Stir slowly and constantly until the marshmallows are completely melted.

3. Add in the cake mix.

4. Once the cake mix is completely incorporated, remove the mixture from heat. Add puffed rice cereal and stir until completely coated.

5. Press the cereal mixture into the oiled pan, flattening out the top. Add sprinkles to the top, if desired.

6. Allow the bars to cool in a cool, dry place, away from direct sunlight. Use a knife to cut the bars into squares and serve.
